Thanks for so many wonderful comfort and holiday recipes, Domenica! My mother and aunts often cooked and served celery root (my mother made a delicious salad from it), so this soup with rice is appealing, especially as I too am in deep baking mode for the holidays (though not for any book project, as you are) and in need of ideas for daily meals. Easy comfort food recipes, especially soup and casseroles are a big help. I’ve never tried stuffing onions, but your recipe sounds so appealing, I’d like to give it a try sometime.
I’ve only had celery root salad a couple of times but I LOVED it. Thanks for reminding me about it. Deep baking mode is a good place to be right now! XO

Both recipes feel warm and comforting – exactly perfect for holiday meals at home. The soupy rice with celeriac and chestnuts seems perfectly adaptable to a plant-based version, and I'm already mentally recipe-testing a vegan variation on those stuffed onions. Reimagining recipes while maintaining their soul-warming essence always feels like a wonderful challenge.

The soup from Nigella sounds delightful, and the onions absolutely mouthwatering. I think the onions and perhaps the soup as well would go nicely with a Christmas standing rib of roast beef. I send my best wishes to you and yours for a wonderful holiday season. ABC
